Why buy a pack rather than the pieces

Because the pieces overlap. Levels, a mount and professions are one route through the world, and doing them together is not doing the same walk three times. The packs cost less than the same services bought separately, and the cards say exactly what each one contains. The largest adds gear so the character is dungeon ready rather than just sitting at the cap.

Ordering one before launch

A pack booked early is a reservation rather than a delivery, and it is the best thing to book early: the booster starts at the opening hour and works through the pack while everybody else is reading the patch notes. The order page tells you the day work starts.
