Do I keep the progress earned on the way?

Yes. Battle pass progress, hero unlocks and anything else the account earns during the fifty wins are yours, on your own account. Nothing is transferred from anywhere else.

What is the difference between the unlock and the season reset?

The unlock is for an account that has never played competitive and has to clear the fifty win requirement first. The season reset is for an account that already has, and wants the new season played back up to where it finished the last one.

Fifty wins before you can queue

Overwatch 2 will not let a new account into competitive until it has won fifty Quick Play games. Not played fifty, won fifty, which at an ordinary win rate is closer to a hundred games and somewhere around seventeen hours. It exists to keep smurfs out, and it lands on everybody who buys the game and wants to play the mode it is known for.

The other thing on this page is not an unlock. Every season Overwatch resets where you sit and asks you to play your way back, and a reset package is that climb done for you to the rank you finished the previous season on. Pick the unlock if the account has never played competitive, and the reset if it has and the season turned over.
